Pascal Jolivet 2022 Sancerre « Les Caillottes » is a benchmark expression of top‑quality Sancerre: 100% Sauvignon Blanc sourced from a single high‑end chalky limestone (caillottes) parcel planted on south‑facing slopes near Bué in the Loire Valley .


🌿 Terroir & Winemaking

  • Vineyard: From 3.5 ha of ~40‑year‑old vines on white chalk soil with excellent drainage.

  • Vinification: Manual harvest, careful sorting, gravity-fed, stainless-steel fermentation with natural yeasts, followed by 8 months on fine lees to develop texture.

  • Aging potential: Recommended to keep up to ~10 years under proper conditions .

  • Aroma: Bright citrus zest with orange marmalade, roasted green apple, quince, Korean pear, and a chalky/flinty note
