Morelli Straccetti is a rustic Tuscan ribbon pasta made with durum wheat semolina and fresh wheat germ, which gives it a gentle wheat fragrance as it cooks. The dough is bronze-drawn and dried slowly at low temperature, so the surface stays slightly rough and holds sauce well. You may notice the cooking water turning a pale green — a signature sign of Morelli’s wheat germ method. The irregular, wavy strips look generous and full on the plate and don’t clump together easily. Straccetti is especially good with porcini mushroom sauces, but it also works with simple butter and herbs, light cream sauces, or a mix of sautéed vegetables.
