Grapes / Production

  • Blend / Varieties: This wine is a white blend of several grape varieties: Sauvignon Blanc, Grechetto, Traminer, Sémillon, and Riesling. 

  • Noble Rot: The grapes are affected by Botrytis cinerea (“noble rot”), which concentrates sugars, flavors, and aromas. Harvesting is done in late October through November, often in several successive passes as the rot develops.

  • Soil & Climate: Vineyards are at altitudes between ~200 and 450 metres, with clay-based soils rich in marine fossils. Morning mists in autumn help develop the noble rot. The 2022 season had warm dry conditions in early months, regained balance with rains in August, then fog in October/November to favor Botrytis. 

  • Vinification / Ageing: After hand-harvest, the bunches are sorted, crushed, and pressed gently. The must ferments for ~18 days at ~17 °C. Part of the wine ages in 228-litre oak barrels for several months, then finishes ageing in stainless steel tanks.

Aspect Description
Color Bright, intense golden yellow. 
Nose / Aroma Ripe tropical fruit: pineapple, mango; also apricot, peach; citrus zest; richer notes of honey, caramel, and buttery nuance; spice hints of saffron and fresh ginger. 
Palate / Taste Sweet but well balanced by lively acidity; dense and full-bodied; flavors mirror the nose: tropical fruit, dried apricots, citrus, candied fruit; sweetness is complemented by complexity (spice, honey) without being cloying. 
Finish Long and persistent; notes of honey, jam, dried apricot, and candied fruit linger. Sweet yet lifted by freshness, so that the finish doesn’t become heavy. 

Strengths & What Makes It Special

  • Beautiful balance of sweetness + acidity. Even in a dessert wine style, it’s not overly heavy; the freshness and minerality from the terroir come through.
