Origins & Craftsmanship
La Chablisienne is a cooperative based in Chablis (founded in 1923), producing a significant portion of the region’s 1er Cru and Grand Cru expressions.
The Vaulorent vineyard lies on the right bank of the Serein River, adjacent to the Grand Cru Les Preuses, with a southwest exposure. The soils are Kimmeridgian marl and limestone, rich in fossilized oyster shells.
In 2021, fermentation and aging were done in mixed vessels: stainless steel vats and barrels. Wines spend 16 months on fine lees, with roughly 30 % in oak barrels (up to 40 % new oak) and the rest in steel (or neutral oak).
