This causes the cheese to ripen like a smaller cheese would. This mold is best for surface ripened and washed rind cheese, requiring little to no pressing.
The additional surface, of the finished cheese, is ideal washed rind cheese, allowing for more surface to be washed and a complex flavor to develop throughout.
