The piñas are cooked in a low-pressure autoclave over a 24-hour cycle to preserve agave’s natural sweetness. Extraction is performed via a four-pass roller mill, and the juice is fermented with proprietary yeast in stainless steel vats using natural volcanic spring water trucked in from Navichi Springs. The spirit is double-distilled in stainless pots with copper coils, bottled at 40% ABV (80 proof), and is certified organic, kosher and additive-free.
