Story: You might know them as the wild harvested, gnarly big boys that can grow bigger than the size of your hand. Traditionally, surf clams are only found in two settings - as the generic chopped canned clams in grocery stores, or in high end sushi restaurants where only the foot is eaten as something of a delicacy. That is, until Skip Bennett entered the chat and began spawning surf clams in our hatchery.
Why they're unique: Farming surf clams (something that essentially has never been done before) allows us to harvest them at the perfect 'littleneck' size and essentially use them in the same way: sautéed in a pan for pasta, simmered in broth for Driveway Clams , or eaten raw on the half shell. A perfect mix of a hard and soft shell - the most versatile clam out there.
How they taste: Sweet, briney, more beautifully subtle than littleneck clams but not underwhelmingly so.
We recommend enjoying by Sunday, May 7th.
