Product Description
Terroir Gin is like wandering through a Pacific Northwest forest in a glass—dramatic, woodsy, and evocative. It sidesteps “garden-patio” gin tropes and leans hard into evergreen, bay, and herbaceous tones. It’s bold, rugged, and perfect for those who want gin that transports you somewhere wild.
Origins & Craftsmanship
Terroir is a signature expression from St. George Spirits (Alameda, California), crafted with a philosophy of “place-first” distillation. The distillers draw on local Californian flora—Douglas fir, California bay laurel, coastal sage, and more—to create a gin rooted in its wild surroundings.
In production, the fir and sage are distilled separately to better control their impact, while botanicals like bay laurel and juniper are vapor-infused. The remaining botanicals (coriander, angelica, orris, citrus peels, etc.) go directly into the pot. Coriander in particular is wok-roasted before distillation to intensify its earthy character.
This spirit is bottled at 45 % ABV, non-chill filtered, and without added coloring. Its character is intentionally rugged and bold—St. George likens it to “a forest in your glass.”
Tasting Profile
Nose: Aromas of pine needles, fir cones, and forest undergrowth dominate, layered with bay leaf, sage, and a subtle citrus whisper. The herbal, resinous edge is strong from the first sniff.
Palate: The texture is firm and clean. Pine and fir resinality carry forward, joined by savory sage and bay leaf. A softer citrus brightness (lemon or Seville orange) emerges mid-palate, along with coriander spice and gentle root underpinning.
Finish: Dry and lingering, the finish leaves a trail of forest incense—pine and sage linger longest, with a final herbal-mineral cast. There’s little sweetness; it’s more about aromatic persistence.
