Origins & Craftsmanship
Crafted using 100% malted barley—of which a small portion is lightly peated—the whisky is double-distilled in copper pot stills in Tel Aviv. It is part of the Apex “terroir” series, in which the barrels spend the first year of maturation in the En Gedi nature reserve along the Dead Sea under high temperatures and extraordinary evaporation (angel’s share), before being finished back near the coast. The cask-blend is wide-ranging: approximately 75% ex-bourbon plus STR (shaved, toasted, re-charred) wine barrels, ex-red wine, ex-rye, ex-Pedro Ximénez sherry and virgin oak. Non-chill-filtered, kosher-certified, and bottled at a robust ABV of approximately 55-56%.
