Origins & Craftsmanship

This expression comes from the team at El Jolgorio in Oaxaca, Mexico. Made with Agave Espadín, the Pechuga style is unique: during the second distillation, a range of local fruits (pineapple, orange, apple, pear, plantain) and a raw turkey breast (“pechuga” means breast) are added to the still. It’s a production rooted in celebratory ritual, typically reserved for special occasions. The agaves are cooked in traditional earthen pit ovens, milled with a tahona, fermented in open-air vats, and distilled twice in copper pot stills. Edition #29 is one of the numbered batches reflecting this artisan production.
