Origins & Craftsmanship
Made at The GlenAllachie Distillery in Speyside under the direction of master distiller Billy Walker, the Meikle Tòir (“big pursuit”) range marks the distillery’s foray into peated single malt production. The Sherry One starts with spirit peated to 35 ppm using mainland peat from St. Fergus. The new-make is fermented over 160 hours—an extended period compared with some peers—to build fruit-forward esters. Initial maturation happens in ex-bourbon American oak barrels, followed by a finishing period in Pedro Ximénez and Oloroso sherry puncheons. The dram is bottled at 48% ABV, non-chill-filtered, with natural colour.
