Origins & Craftsmanship
Don Nuño is part of Lustau’s Solera Familiar line, matured in Jerez de la Frontera under strict oxidative conditions. It is made from 100% Palomino Fino grapes.
Rather than aging under flor (like Fino or Manzanilla), Don Nuño spends its time in a Solera y Criaderas system entirely without flor, exposing the wine to controlled oxidation. The Solera system blends younger and older wines over time, delivering complexity, consistency, and depth.
The barrels used are American oak, deepening the wine’s oxidative character and allowing the influence of wood aging to integrate with the Sherry’s natural evolution. The resulting profile is darker, richer, and spicier than lighter Sherry styles.
