🍇 Origins & Grapes

Crafted by third-generation winemaker Vassilis Papagiannakos in Attica—just east of Athens—the wine is made from 100 % old-vine Savatiano (50–60 years old), sourced from ungrafted bush vines planted on limestone soils in Mesogaia 


🛠️ Vinification & Resin

Fermented slowly in stainless steel (60–65 °F), with pine resin from local Aleppo pines added mid-fermentation using gauze bags. The exact resin dosage is carefully managed; 75 % is tank-fermented and 25 % aged in second/third-fill French oak for six months
