Product Description

DoubleWood 12 is a well-rounded, approachable Speyside single malt that manages to deliver complexity without being intimidating. It’s smooth, warm, and nicely balanced between its sweet bourbon cask maturation and the richer, darker tones from its sherry cask finishing. A reliable dram for everyday sipping; great both for those newer to whisky and for those who enjoy subtle layers rather than huge extremes.

Origins & Craftsmanship

  • Distillery: The Balvenie, located in Dufftown, Speyside, Scotland. Known for maintaining many traditional practices (malting floor, cooperage, etc.).

  • Age: 12 years

  • Wood / Cask Treatment: The whisky spends most of its maturation in American ex-bourbon oak casks, then is finished in first-fill European oak Oloroso sherry butts for additional months to add depth and richness.

  • ABV: ~43%

Tasting Profile

Element Notes
Colour / Appearance Rich golden amber, with glowing copper tones.
Nose / Aroma Honey, vanilla, and soft fruit (sultanas, orchard fruit) up front. Then some oak spice, toasted nuts; the sherry finish adds dried fruit (raisins, dates) and a gentle warmth.
Palate / Taste Smooth and fairly mellow at first; sweet with vanilla and oak from the bourbon influence, then more dried fruits (plums, cherries, sultanas), some nutty character, a hint of spice (cinnamon / nutmeg), maybe a subtle citrus edge.
Finish Medium to somewhat long; warming, slightly drying oak, with lingering spice and sweetness. The sherry adds a dry touch at the end, balancing the softer vanilla and fruit.

Food Pairings

Here are suggestions to bring out different facets of DoubleWood 12:

  • Cheese & Charcuterie: A cheese/meat board with mild to medium cheeses (e.g. aged cheddar, gouda, or a soft blue) and cured meats. The saltiness and fat from meats balance the whisky’s sweetness and oak.

  • Seafood: Smoked salmon or lightly grilled seafood. The whisky’s fruit and oak help contrast smoke or mild fish flavours without overwhelming them.

  • Desserts: Fruit-based desserts (apple tart, dried fruit pudding), or desserts with nutty or spiced elements, such as pecan pie or chocolate with a bit of cinnamon.

  • Nuts & Dried Fruit: Almonds, toasted walnuts, dried apricots or figs; these echo the nutty & fruit components of the whisky.

  • Savory / Hearty: Roasted pork with apple compote, or dishes with warm spices (cinnamon, nutmeg) that mirror the whisky’s spiced oak tones. Even roast chicken with a brown butter or maple glaze could be very complimentary.
