The wavy sides stay defined after cooking and help catch sauce along every fold. Because the pasta is bronze-drawn and dried slowly, it has a pleasantly firm bite and doesn’t turn mushy. The cooking water may turn slightly green from the wheat germ, a hallmark of the Morelli style.
